Creamy Ranch Potato & Green Bean Salad

Ingredients

  • 1 1/2 pounds baby red potatoes, halved
  • 1 (14.5-ounce) can cut green beans, drained
  • 1 cup sour cream
  • 1 (1.12-ounce) packet ranch dressing mix
  • 6 slices thick cut sliced bacon, cooked and crumbled
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Chopped fresh parsley, for garnish

How to Make

  1. Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Reduce heat and simmer until fork-tender, about 10–15 minutes. Drain and let cool slightly.
  2. Meanwhile, combine sour cream and ranch dressing mix in a large serving bowl until smooth.
  3. Add green beans and potatoes and toss gently to coat.
  4. Fold in bacon and season with salt and pepper.
  5. Serve warm, or refrigerate and serve chilled. Garnish with parsley before serving.
