
Creamy Ranch Potato & Green Bean Salad

Ingredients
- 1 1/2 pounds baby red potatoes, halved
- 1 (14.5-ounce) can cut green beans, drained
- 1 cup sour cream
- 1 (1.12-ounce) packet ranch dressing mix
- 6 slices thick cut sliced bacon, cooked and crumbled
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Chopped fresh parsley, for garnish
How to Make
- Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Reduce heat and simmer until fork-tender, about 10–15 minutes. Drain and let cool slightly.
- Meanwhile, combine sour cream and ranch dressing mix in a large serving bowl until smooth.
- Add green beans and potatoes and toss gently to coat.
- Fold in bacon and season with salt and pepper.
- Serve warm, or refrigerate and serve chilled. Garnish with parsley before serving.
