
Italian Sausage & White Bean Stew

Ingredients
- 1 (19-ounce) package Italian sausage, hot or mild
- 1 tablespoon extra virgin olive oil
- 1 small yellow onion, diced
- 1 teaspoon chopped garlic
- 2 (15.5-ounce) cans great northern beans, drained and rinsed
- 1 (14.5-ounce) can fire roasted diced tomatoes
- 2 cups chicken broth
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon dried thyme leaves
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups frozen chopped spinach, thawed and drained
- Chopped fresh parsley, for garnish
How to Make
- Cook sausage in a large pot or Dutch oven over medium heat, breaking it up with a spoon until browned and cooked through, about 6–8 minutes. Remove from pan and set aside, leaving any remaining fat.
- Add onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Add beans, tomatoes, chicken broth, oregano, thyme, salt, and pepper, and stir well to combine.
- Bring mixture to a simmer and reduce heat to low. Let soup simmer for at least 20–25 minutes, until flavors have melded and the soup has thickened into a stew.
- Remove from heat and stir in spinach and reserved sausage. Garnish with parsley and serve.
